Mint Chocolate Chips Fudge - My 100th Post (Mother's Day Special)

YIPPEEE!!!! This one is my 100th Post!!! For me its a time to celebrate with something Sweet!!!!

So, I am presenting here Mint chocolate Chips Fudge!!! I am lucky that I just reached to 100th post and Mother's Day is just on a Corner!! Indeed, its a Big celebration for me!!!

With Mother's Day coming right around the corner, it is important to remember everything they have done to get us where we are today. I'm not sure about everyone else, but I certainly would not be who I am without my wonderful mom and here's why:

You taught me what it means to be a hard worker and why that'll one day be so important. You never failed to tell me when I was wrong. I may have hated it then, but I definitely appreciate it now, because I am capable of admitting it when I make a mistake!!

She's warm, loving and supportive. With her help, you feel like you can tackle the world. You can be anybody you want to be because she is behind you. She gives you confidence and a kick in the butt when you need it. As long as she's alive, you have a place to go home when the world gets a little tough. She's mother. There's no one on earth who cares for you like she does. No one.

Today I am reminded once again how truly special you are to me…
Don’t know how you do it, Mom, but you always seem to have time for everyone…
It’s not until we have children of our own that we realize what it really means
to be a mom…
Thanks, Mom, for the everyday things you do that make our lives so special…
Mom, I have so many wonderful memories of growing up…
You’ll always have a special place in my heart, Mom…
There are so many things I have learned from you, Mom…
Every family has its own stories, traditions and memories…
Mom, do you know how many times I’ve thought to myself…

LOVE YOU MOM!!!!! Hugs To you!!! Miss you!!!

On these Double Happiness, Lets Take a tour of these Delicious and Scrumptious Fudge!!

I think, One of the easiest candies to make is fudge. There are several recipes out there but basically there are 2 camps. Fudge made with marshmallow fluff and fudge made with sweetened condensed milk. They are both equally good recipes.

I usually go with the sweetened condensed milk. Mainly because the sweetened condensed milk is faster and easier. No candy thermometer, no standing over the stove. Melt some chocolate chips, decide on a flavor, press into your pan and a few hours later you are eating your fudge! This decadent fudge is perfect for those who love the 'After Eight' combination of chocolate and mint. Makes a perfect food gift! So For these, we will need:

3 1/4 cups white chocolate chips
1 tablespoons butter
1 can sweetened condensed milk
2-3 teaspoons mint extract (not peppermint)
green food coloring
3/4 cups mini chocolate chips, divided

1. Line an 8x8 square pan with foil and lightly spray with cooking spray. Set aside.

2. Melt the white chocolate by double boiler method, or you can use microwave to melt it. Stir chocolate until all lumps are gone.

3. Add Butter. Stir in sweetened condensed milk and mint extract. Add food coloring to desired color. Once completely incorporated, let cool for a few minutes then fold in 1/2 cup mini chocolate chips.
Press fudge into prepared pan. Sprinkle remaining mini chocolate chips on top and gently press into fudge.

4. Refrigerate for a minimum of 2 hours to set before cutting into squares.

Store in an airtight container.

Happy Mother's Day!!!!!!!!!!!!! :))))))))
