Chana Jor Garam Chaat



Chana Jor Garam is a mouthwatering Indian traditional snack made out of black gram. Something chatpata is always my favorite. And this recipe is bang on hit for anyone. It has a rather salty taste. This jor garam which is made of fried and flatten black grams and chopped raw vegetables like onions, tomatoes, carrot, raw mango, coriander leaves as well as other ingredients like puffed rice, red chili powder, Cumin seeds Powder, chat masala, lemon juice and others. The Chana jor garam is served on streets, usually, wrapped in some paper. 


I have beautiful memory with this most popular and delicious snack, When I got engaged, Himanshu's Office was also in Ahmedabad, and we used to meet almost everyday. There were so many place where we used to seat there and keep on chatting for hours. There's a place called Law Garden in Ahmedabad, where you will find each and every street food snacks, including chana jor garam which is normally a man sell it on Thela, or he used to move with big hanging plate on his shoulder with full of chana jor garam and, some masalas ,Onions, and Tomatos, If you wish to have some chopped Raw mangoes in the season, That makes it heaven. So me and himanshu used to have this chana jor garam chaat and we keep on talking and shopping at that place. 



Awww I miss that days. But beautiful memory.  Made these chana jor garam chaat yesterday just for munching, Prisha too loved these flatten chana and she was playing with them full of her hands ;) Well, So you guys enjoy this easy and awesome recipe of chana jor garam and Enjoyyy!!!


Ingredients:

    Chana jor garam as required (I am using Haldiram's Chana jor garam Packet)
    2-3 Green chilies finely chopped
    1/4 tsp Black salt
    1/4 Cup Fresh coriander leaves
    1/2 tsp Roasted Cumin Powder
    1/2 tsp Dry Mango Powder
    1 Tbsp Lemon juice
    1 Onion finely chopped
    1 Tomato finely chopped
    Chaat masala to taste

    Salt to taste
   

Method

How to make Flatten Black gram

1. Take garbanzo beans or Kala chana and  soak it over night and boil it till the chana is soft.

2. Press them with the help of rolling pin and dry them in sun or in the oven.

3. Heat oil in a pan add these flatten chana and cook them on a medium flame, still stirring, transfer into plate. Your chana jor garam is ready to make chaat.

4. Now add coriander powder, red chili powder, roasted cumin powder, black salt and dried mango powder, Salt and mix them well.

3. At the end Sprinkle lemon juice, onion, tomato, chaat masala on it and Enjoyyyy this chatpata street food snack.

Note: If the Mango season is there, You can add Raw chopped mango too in this chaat...I personally love that tangy taste of raw mango in this chaat....In fact, In any chat ;)

Rajsthani Besanwali Bharwa bhindi



Indian cuisine encompasses a wide variety of regional and traditional cuisines native to India. Given the range of diversity in soil type, climate, culture, ethnic group and occupations, these cuisines vary significantly from each other and use locally available spices, herbs, vegetables and fruits. Indian food is also heavily influenced by religious and cultural choices and traditions. Cooking in Rajasthan, an arid region, has been strongly shaped by the availability of ingredients. Because water is at a premium, food is generally cooked in milk or ghee, making it quite rich. Gram flour is a mainstay of Marwari food mainly due to the scarcity of vegetables in the area. 


These Stuffed lady fingers are also one of them, This is quite easy and no fuss recipe. This Bhindi recipe requires Some regular spices, Roasted Gram Flour and Onions ( Optional), and your spicy and crispy Bhindi is ready to serve. Being a Rajsthani, My mom used to make this Besanwali Bharwa Bhindi. I love to enjoy it with Some Boondi ka Raita or with simple yogurt with bit of Sugar in it. As Nowadays I could not enjoy that Garma garam Roti with this super tempting sabzi, which my mom used to serve me. :( Priorities change the life, As Now its more important for me to serve my husband and daughter. very rarely i got chance to enjoy some hot phulkas or parathas, In fact the chances are Nil. Though many times Himanshu used to tell me let me make something whatever you want, well, it was a weekend yesterday, and he was telling me let me make some Upma for you in breakfast, I will find the recipe on Youtube ;) Lol...I told him, Ohhh really, Then Why Youtube? Your Blogger wife is here, ask me...hahahah...and he was like, ya ya Blogger madam ;) and he made nice Upma, though I helped him, But had a fun. Then I was asking him that what to make in lunch? 



As We #foodiemonday People are going to make some #Stuffedveggies for our this Monday Bloghop Event, and I was not at all ready that what to make in next event. I was thinking to make some stuffed brinjals, That small Brinjals, But couldn't find them fresh and quality was not good. So I had some fresh Okra or ladyfingers or Bhindi in my Fridge, and I was all set for next bloghop. Ohh yess, So I was telling that I asked himanshu that what to make in lunch, and then I made these stuffed Besanwali Bharwa Bhindi with Garma Garam Roti, and We enjoyed our lunch, These Bhindi are stuffed with Some regular spices and then cooked with roasted gram flour, and the the use of kalaunji is good to make the Bhindi more delicious. Ohh yes this time Prisha's mention is not in my today's post, As she is sick again with tonsillitis. and have to bear with Antibiotics once again which I don't want at all :( But she is all Ok now. So You guys Enjoy this Besanwali Bharwa Bhindi recipe below and Enjoyy :)


Ingredients:

 1/4 Cup Gram Flour, Roasted
 500 gm Bhindi (Ladyfingers)

 1/2 tsp Onion seeds, Kalonji
 1 Onion, sliced chopped
 1/2 tsp Turmeric powder
 1 tsp Garam masala powder 

 11/2 tsp Roasted cumin powder
 11/2 tsp Fennel seeds, crushed    

 1/2 tsp Red chili powder to taste
 1 Tbsp  Coriander powder
 4 Tbsp Oil 

 Salt to taste 
 
     



Method

1. Clean the Bhindi with the help of wet cloth and Trim them and make a slit on one side without cutting through.

2. Take salt, turmeric powder, Garam Masala powder, roasted cumin powder, fennel seeds, red chili powder and coriander powder in a small bowl and mix.

3. Fill this mixture into the slits. Sprinkle the remaining mixture (if any) over the Bhindi and add a tablespoon of oil. Mix and set aside


4. Heat the re
maining oil in a pan, add Onion seeds and saute till fragrant. Add Onions and saute for one minute.

5. Add gram flour and saute for a couple of minutes. Add the stuffed Bhindi and mix.

Lower the heat, cover and cook, stirring occasionally, till the Bhindi get cooked and turn crisp. Serve hot with Roti or Paratha, Daal or Raita.

Makki ki Baked Mathri



Cornmeal is a meal ground from dried maize (corn). It is a common staple food, and is ground to fine, medium, and coarse consistencies, but not as fine as wheat flour. Unlike flour made from wheat grains, corn meal does not contain gluten. Use corn meal in place of wheat flour in your baked foods -- finely ground corn meal yields baked goods with a smoother texture, while coarsely ground corn meal provides a crunchier texture. corn as a good source of fiber. Corn is a food that gives us plenty of chewing satisfaction, and its high ratio of insoluble-to-soluble fiber is partly the reason.

These Makki ki mathri made from Corn meal are baked stuff. It takes bit longer time to bake them, But after baking them, it tastes good instead of frying them.  So in that term, a damn healthy stuff to enjoy with tea or anytime. So here the vacations are over and school, Offices are on their track, Again now I will get time to work on my blog and a bit time for me only. ;) Though I miss you Himanshu and Prisha :) In these days I like to make something very easy and quick dry snacks, As Prisha is all ready to take them in her lunch box, and also she can munch them when she is at home after school. The schedule is now on track, like In morning, Breakfast, Tiffin, Lunch box, and to drop Prisha to her Cab....Ohoooooo, I feel like I am a superwoman Sometimes ;) 


Every time when they both went at their places, I feel like, I should turn ON AC on 22, make Silent my phone, take my blanket, and Grrrrrrrrr!!!!! I take this oath every morning when I wake up, But All is like Phewwwwww!!!! Nothing is going to be like this :( So much work at home, This and That ;) And the time is over,, Prisha is back to home!!! Lol... And then After her lunch and other stuffs I am going to prepare these Baked Makki ki Mathri and These all are here for you guys!!! Ingredients:

2 Cup Makki ka Aata (Corn meal)
2-3 Tbsp Sesame Seeds
1/2 Tbsp Kasoori methi
21/2 Tbsp Oil
1/2 Tsp Black Pepper, crushed
Salt to taste
1 Cup Warm Water

Method:

1. Take a Bowl and add Corn meal (Makki ka aata) Salt, Crushed Black pepper, Kasoori methi and oil in the flour. Knead a soft dough with lukewarm water. Leave the dough covered for 10-15 minutes. Mash the dough to make it soft.

2. Preheat the Oven at 180 degree C. Take out a small lump from the dough and shape it like a ball. Flatten it a little with both hands. Now place the Mathris on a baking tray. and bake them for at least 25-30 minutes or until they turned light brown from both the sides.

3. The delicious Corn flaky Mathris are now ready to serve and eat. You can put them in air tight container and you can enjoy them for at least a month.

Samosa - Teatime Snack



Rajasthani cuisine was influenced by both the war-like lifestyles of its inhabitants and the availability of ingredients in this arid region. Food that could last for several days and could be eaten without heating was preferred. Scarcity of water and fresh green vegetables have all had their effect on the cooking. It is also known for its snacks like Bhujia, Mirchi Bada and Pyaaj Kachori and Samosa.

A samosa is a fried or baked dish with a Savoury filling, such as spiced potatoes, onions and other stuffing. The samosa contains Wheat flour or maida flour shell stuffed with some filling, generally a mixture of mashed boiled potato, onions, green peas, spices and green chili.  The entire pastry is then deep-fried to a golden brown color, in oil. It is served hot and is often eaten with fresh Indian chutney, such as mint, coriander or tamarind. Samosas are often served in chaat, along with the traditional accompaniments of yogurt, chutney, chopped onions, coriander, and chaat masala.


This very popular and all time favorite snack is not at all from India, The origin of this super tasty snack is from middle east. They used to fill the meat filling in this samosa and enjoy them. Its Originally called 'sambosa', the Indian samosa was actually introduced to the country sometime between the 13th and 14th century by traders of the Middle East.And I love this Potato and peas veg stuffing and Indian touch of spices in it. I have fried some onions in this filling and made the mixture of samosa filling. These are the Rajsthani style samosa and our Sunday was
awesome with this Samosas and Hot hot Chai ki chuski. Well, I enjoyed these tempting samosa with my coffee...You guys enjoy them with anything you love and check out the recipe below :)

How to make Masala Tea?

Ingredients:
   
    1 cup milk
    21/2 cups water
    4 whole cloves
    2 cardamom
    1 cinnamon stick, broken into pieces
    1/4 teaspoon ground ginger
    1/8 teaspoon fresh ground black pepper
    2 tablespoons granulated sugar
    2 tablespoons Tea



Method:

    1. Crush the cloves, cardamom pods and cinnamon in mortar.
    2. Heat a saucepan with water, ginger and pepper and bring to a boil.
    3. Remove the pan from the heat, cover and let steep for 5 minutes.
    4. Add the milk and sugar to the pan and bring to a boil.
    5. Remove from the heat and add the tea.
    6. Cover and let steep for few minutes.
    Stir the chai, then strain it into a warmed teapot or directly into teacups.
    Enjoy this chai with hot samosa!



Your super hot Chai is ready to serve!!!






How to make Samosa?

Ingredients

2 Cup All purpose Flour
3 Tbsp Oil
1/4 tsp Carom seeds
3-4 drops of Lemon juice
4 Potatoes, Medium size, Boiled
1/2 Cup Green Peas, Boiled
1/4 Cup Carrot, Boiled and finely chopped
1/4 tsp Mustard Seeds
1/4 tsp Coriander seeds
2 Cloves
1 small Cinnamon stick
1/4 Cup Onion, Finely Chopped
5-6 Curry leaves
3-4 Green Chilly, Finely chopped
1 inch Ginger, grated
1/2 tsp Red chilly Powder
1/2 tsp Coriander Powder
1/4 tsp Turmeric Powder
1/4 tsp Garam Masala
Salt to taste
Oil to Fry



Method:

1. Take a big bowl and add APF, Salt, Oil and Carom seeds , and lemon juice mix them all well and make stiff and tight dough. (Note: Addition of Lemon Juice makes the cover of Samosa more crunchy.)



2. Heat a pan with oil and add mustard seeds, let them crackle and add Cloves, cinnamon stick, chopped Onions, Green chilly, Curry leaves, Ginger and cook them until Onions turns light pink. Add all the spices including salt and cook for seconds.


3. Now add Boiled and mashed Potatoes and boiled Green Peas and boiled carrot in it and mix it very well. sprinkle some chopped coriander leaves on the mixture and your samosa stuffing is ready. let the mixture come on room temperature.



4. Now make medium size small balls from the dough, roll out the dough ball by keeping it little thick, then divide the round Poori into two halves and lift one part in your hands, apply some water on the edges and fold it in a cone shape.


5. Now stuff the samosa mixture in the cone, and again fold at the back and apply some water on the edges. take both the ends together and stick well, make them in a perfect samosa shape.  Meanwhile heat the Oil in a wok.

6. Like same way, prepare all the samosas. Now deep fry the samosas on medium heat until they get brown and crispy from all the sides.


7. Drain out the fried samosas on tissue paper to remove excess oil and your super delicious Samosas are ready to serve with hot cup of tea or coffee!!

You can serve it with green chutney, or Tamarind chutney or simply with Tomato ketchup too!!!!

Chia Seeds Yogurt Pudding



Fiber is associated with reducing inflammation, lowering cholesterol and regulating bowel function. Chia seeds are an excellent source of fiber, with a whopping 10 grams in only 2 tablespoons. That is one-third of the daily recommended intake of fiber per day. Chia seeds are rich in antioxidants that help protect the body from free radicals, aging and cancer. The high antioxidant profile also helps them have a long shelf life. They last almost two years without refrigeration.

Chia seeds contain no gluten or grains. Therefore, all of the nutritional benefits of chia seeds can be obtained on a gluten-free diet. The outer layer of chia seeds swells when mixed with liquids to form a gel. This can used in place of eggs to lower cholesterol and increase the nutrient content of foods and baked goods. To make the egg replacement, mix 1 tablespoon of chia seeds with 3 tablespoons of water and let sit for 15 minutes. Unlike flaxseeds, which are also high in omega-3 fatty acids, fiber and minerals, chia seeds do not need to be ground in order to obtain their nutrient or egg- replacement benefits.

Ingredients:

1 Cup Yogurt
1/4 cup Chia seeds
2 Tbsp Honey
1 tsp. Vanilla extract
pinch of salt
1/2 Cup chopped bananas, Apples and some nuts




Method:

1. Add all ingredients except chia seeds to a medium bowl and whisk vigorously to combine. Add chia seeds and whisk to combine.
 
2. Cover the bowl with plastic wrap and refrigerate overnight. You want pudding-like consistency in the morning.

3. In the morning, give the pudding a good whisk to evenly distribute chia seeds that have settled on the bottom. Spoon into individual serving dish and enjoy chilled with desired toppings. You can put leftover in fridge for 2-3 days.

Rajma and Corn Patty Burger



Ok, So I am back after the break from my vacation, again started my blogging journey with my Foodiemonday Team :) Well, Missed so much of writing and cooking and taking photos of my food. But sometimes a break is must to get the fresh start of anything. I feel the same when I was back to doha. So many thoughts in my mind, Thinking that how much this blogging career will be good for me, How much time will it take to make it more successful. blah blah blah......Longgg and deep thoughts..... Well, Apart from this enjoyed my India Vacation so much....long and hectic journey, but at the end when you reach to the home and see the smiling faces of your family, this journey makes you feel nothing. I know Everyone can gel with this Emotions :)


This India trip was so memorable for me, a new family member arrived in our life, I became Mamiji (aunt), and a little angel is so so cute. Prisha is now an elder sister.....Wooow , This is so a different feeling. :) And when it comes to Ahmedabad, The thing is that, whenever I visit to Ahmedabad, I used to go for shopping, to meet my friends and the place which I can never Ignore because of Prisha is Law garden. Law garden is the place where you can find each and everything you want, You can buy clothes, so many restaurants, kids zone or I should say Prisha's Zone...Lol..kidding ;) and a big big garden to hang out at. So its a happening place to stay for hours. But this time I was not so much in shopping and all, I stay back home with mom, and spent very good time at home. Though Cant manage to meet all my friends, But tried to make it. Last 3 bloghops I couldn't manage to join, Now I am back to Doha, and so much excited to take part and get back to the event.


Our Team has decided to make some different #Burgersfilling, and I was excited to try some veggie burger as you all know I am a pure vegetarian. The only thought was there in my mind is to try Mc Veggie Burger, But then I dropped the Idea and tried to make a burger of Burger King style veggie Burger. They use Rajma in there Veggie Burger and I So love it. I have used Rajma and Corn kernels in this Burger filling Patty and all the sauces which make your burger complete. Apart from this I have added some veggies too like carrots, green peas and french beans too to make this more healthy. So you guys check out this super tempting burger recipe and do drop a comment that how did you like the recipe.

Ingredients:

1 Cup Kidney Beans (Rajma), Soaked and Boiled
2 Potato, Boiled and mashed
1/4 Cup Corn Kernels, Boiled
1/2 Carrot Green peas and French Beans, Chopped and blanched
1 Onion, finely chopped
2 Green chilies, Finely Chopped
1/4 tsp Ginger, finely chopped
1/4 tsp Turmeric powder
1/2 tsp Red chili powder
Salt to taste
1/4 Cup Coriander leaves, finely chopped
2-3 Tbsp Dry Bread Crumbs
2-3 Slices of Tomato
2-3 Slices of Onion
2 Cheese slices
2 Tbsp Mayonnaise
1 Tbsp Mustard Sauce
lettuce leaves as required



Method:

1. Wash and Soak the Rajma overnight, drain the water from it and boil them properly with some salt by taking 3-4 whistle. 



2. Now take a Bowl, add Boiled Rajma and Boiled Potatoes, mash them coarsely. Now add all the veggies including Corn kernels and chopped Onions, spices, mix them all very well.
 
3. Add salt and coriander leaves to the mixture and bind the mixture with some dry bread crumbs. 



4. Take 4 Tbsp of mixture in your palm and make a big round patty of your burger size. Roll the patty in dry bread crumbs and shallow fry the Patty.  (Note: You can always deep fry this patties, I am using less amount of Oil to make it bit healthy :))




5. Meanwhile, Put the Lettuce leaves in an ice cold water so that they will be more crunchy at the time we assemble the burger. Our Rajma and Corn Patty is ready Now lets assemble the burger. You can always assemble it by your choice. First Cut the Burger buns in two parts and butter the one side of the Bun.


6. Spread some Tomato ketchup on butter and Place one Tomato slice and lettuce leaves on it.

7. Now place Our Burger Patty on lettuce leaves and cover it with cheese slice, Finish up the Burger with Mayonnaise, Mustard Sauce and Onion Rings. 

Your super tempting Veggie Burger is ready to eat ;) Enjoyyyyyyyyyyyy the heaven!!!!

Eggless Chocolate Cake with Molasses



Molasses contains a number of essential minerals such as calcium, magnesium, manganese, etc.  It is a good source of energy and carbohydrates and it contains sugars as well. In addition to this, it offers various vitamins such as niacin, vitamin B-6, thiamine and riboflavin. It is very low in both fat content and fiber.


It is a beneficial sweetener that is rich in naturally available micro- and macro nutrients. I have got the Blackstrap molasses from #goIndiaOrganic and #Plattershare, and I tried to make something in dessert with this product. Made this Chocolate cake with this dark Molasses and trust me my cake turned out really well. Blackstrap molasses is a nourishing sweetener which contains a considerable amount of nutrients that are essential for the functioning of the body, unlike refined white sugar. It is also known as final molasses in cane mills and refinery molasses in a refinery setting.

Ingredients:

200 gm Condense Milk
2 Tbsp Butter
1/4 tsp Baking Soda
3/4 tsp Baking Powder
3/4 Cup All purpose Flour
3-4 drops Chocolate Essence
11/2 Tbsp Cocoa Powder
1/2 Cup Blackstrap Molasses
 

Method:

1. Line up all the Ingredients. Preheat oven to 200 degrees. Grease the cake pans. Dust with flour; tap out excess.

2. In a medium bowl, combine Condense Milk, Baking Powder, Baking Soda, and Essence mix this mixture until fluffy.

3. Add Butter and Molasses in the above mixture and again mix it well until the better becomes fluffy.

4. Now Add All purpose flour and Cocoa Powder, Fold them very well.

5. Add milk to reach the pouring consistency of the batter.

6. Pour batter into prepared pan. Bake 13-15 minutes or until cake tester inserted in center comes out clean

7. Cool in pans on a wire rack 10 minutes. Invert onto wire rack; invert again and let cool completely on rack.

8. Garnish it with some yummy Chocolate Sauce.
