Mini Chocolate Muffins (Eggless)




Muffins, Muffins Muffins........I love them!!!! Perfect for your picnic lunch box or an afternoon treat – these mini muffins are just over a mouthful. These are specially made for my lil girl Prisha!!! I am posting this recipe for all mothers who have toddlers!!! My princess simply, pick up this muffin, she ate it by herself, Thats make me so so Relaxing, Because her lunch, dinner she don't eat by herself!!! Sometimes Thats take too much time to feed her!!! she used to play here and there and come back to me, had her bite and again back to her playing area!!!! when she was too young, I mean, when she started to walk, I used running behind her to give a bite of her food!!! Ohhh that couple of months were so so tough me.....I'd lost 4.5 kgs when she was of 14 months.....Well, Time runs and now she is of 30 months baby!!!

Now, She speaks everything, whatever she want she ask me to have it, She express her all feelings with me, One more hilarious thing is that I used to tell her a story of a lion and Rabit, Nowadays If you ask her to tell some story, she will tell you whole story from beginning to end!!! hahahahaha!!!! I just love to hear that, love to hear that with her small, lil and innocent voice!!!! Right now I am feeling that when will I complete this post and grab her and ask her to tell me her story of lion and Rabit? :))


These Muffins are very healthy and yummy for anyone!! I am dedicating these recipe to all the toddlers, As I have also :)) !!! So, check out step by step recipe and Enjoyyy it!!!

Ingredients

1 Cup All-purpose flour
1/4 cup Condense Milk
2/3 cup sugar
1/3 cup cocoa powder
1/4 cup dark chocolate (melted)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/4 cup vegetable oil
1 teaspoon vanilla

Method:

1 Heat oven to 200 degree C. Place mini paper baking cup in each of mini muffin cups.

2 In medium bowl, mix flour, sugar, cocoa, baking powder, baking soda and salt with whisk. In small bowl, mix buttermilk, oil, vanilla and condense milk with whisk. Add buttermilk mixture and chocolate chips to flour mixture, stirring gently until blended. Divide batter evenly among muffin cups, filling 3/4 full.




3 Bake 12 to 14 minutes or until top springs back when touched lightly in center. Cool 5 minutes; remove from pans to cooling rack. Cool completely, about 10 minutes.
