Mocha Balushahi

Balushahi (also spelled Bhadushah) are made from a stiff dough made with all purpose flour, ghee and a pinch of baking soda. They are fried in ghee or oil and dunked in thick sugar syrup so that there is a sugar coating. They are very sweet, but tasty with a slightly flaky texture.

Balushahi is a traditional dessert in northern Indian Cuisine, Pakistani Cuisine, Nepali cuisine and Bangladeshi cuisine. It is similar to a glazed doughnut in terms of ingredients, but differs in texture and taste. In South India, a similar pastry is known as Badushah.

In India's diverse languages, sweets are called by numerous names, one common name being Mithai They include sugar, and a vast array of Ingredients such as different flours, milk, milk solids, fermented foods, root vegetables, raw and roasted seeds, seasonal fruits, fruit pastes and dry fruits. Diwali and sweets are inseperable. Without relishing mouth watering sweets of diwali, No one can actually get the spirit of Diwali celebrations. The Five day festival of Diwali is celebrated with rituls of Lakshmi Pooja, Sweets and crackers. Diwali could be more memorable by preparing these sweets at home and serving your near and dears!!

Check out the very Famous Balushahi recipe but here I am oresenting this with lil twist...Its a Mocha Flavor Balushahi ! This is Our 13th #Foodiemonday #Bloghop Event, and The theme is #diwalisweets ....I was too excited to share this recipe with you all!!! Check out the step by step recipe!


1 Cup Maida
1/2 tsp Baking Soda
3 Tbsp Curd
3Tbsp  Ghee (Clarified Butter)
Ghee for fry


1. Sieve the baking Soda and Maida in a Bowl and Mix well.

2. Now add Ghee and make the mixture crumbly! Then add curd and combine it well.

3. Now, Make a dough and keep it aside for at least half an hour!

 3. Take a little dough and prepare a round shape.

4. In another frying pan, add water along with sugar and let it boil till it gets one-string consistency.

5. In a non-stick pan, Heat Ghee to deep fry the Balushahis. Once Ghee becomes hot, fry the prepared balls until they turn golden in shade.

6. Take out the Balushahis and let them cool then keep in sugar syrup for about 2 minutes and then remove.

Balushahis are ready to serve.!!!

How to make Mocha 


4 Tbsp Milk Powder
1/2 tsp Cinnamon powder
1/2 tsp Mocha coffee
1 Tbsp Powder Sugar
1 Tbsp Butter
2-3 Drops Vanilla Essence


1. Take a bowl and mix all these Ingredients and fill this mixture in a piping bag. keep it Aside!
Now Top this Mocha mixture on Balushahi and sprinkle some chocolate vermicelli on it.

Dryfruit Pizza

Diwali is just right on the corner, and lots and lots of varieties of sweets, snacks and many more posts are on Air, That's the huge celebration in India!! After all, Its a big Festival of India..So, Have you started making dry snacks, Sweets and your different dishes which you love to serve to your guests and of course your Family Members..?

Well, I am very far away to my country India, So I miss this festival preparation and that enthusiasm to celebrate it... Me and My Mom loved to try different Snacks, Different Sweets, and yes the authentic Diwali recipes too...Ohhh Seriously Miss you Mom !!!!

The Excitement of the celebration is too too High....Last time Diwali was not so much good, As we did not have any friends or circle here, But this year, There are so many families and friends will be there to enjoy together...This time we all will celebrate it together and have lotsss of fun!!!

So, For that we are planning menus that what will be the sweets, snacks and varieties for our kids too :) Trying to make something easy but in different style, Here Tried a different version of Kaju katli in pizza style...You can simply make kaju katli by this recipe too... This Dryfruit Pizza are so so tempting in taste...Its a very easy and quick recipe to try...You can top it with whatever topping you like...I used Cream, Different colors of Sweet Boondi (Nukti) chopped almonds, cashews,!! You can use Black Raisins too as that will look like a olives in your regular Pizza ;) Everyone will love this colorful sweet, So Do try it in this Diwali..and Impress your family and guests on the festival :)

Preparation Time: 1 hours
Cooking Time : 15 minutes
Serves: 4 to 5


100 gm Cashews
50 gm Powder Sugar
1/3 Cup Cashew, Almonds, Walnuts, Chopped
2 Tbsp Raisins


1. Wash the cashew properly 3 to 4 times and soak them for half to one hour.

2. After an hour, Drain the water from cashews and make smooth paste in mixer.

3. Now, Take a Nonstick Pan and add this Cashew paste in it and add Powdered Sugar as well...Mix them well with the help of Spatula....Keep in mind that we have not turn on the gas yet!

4. After mixing Cashew paste and sugar, Turn on the gas and keep on mixing the mixture with spatula and cook it until it leaves the pan, and check, Does the mixture rolling with your spatula? It should not be sticky. finally it will be firm as a soft dough. (Note: To check the mixture, Take a small ball from the mixture and try to roll it in your hands, If it is not sticking in your palm, That means its ready..If it is still sticking, You need to cook it for few more minutes.)

5. Now, add chopped Nuts and mix them well. Meanwhile add the Raisins too. and Mix them all very well. Now switch off the gas. (Note: Instead of raisins you can use Fig as well..Just simply finely chop them and add it)

6. Take out this mixture and place it in a bowl. Let it to cool, Not so cool , it should be warm.

7. Now, Take a Butter Paper and place this Mixture dough on it and put another butter paper on it and roll it, cut them like pizza slices!! And put them in a freeze for half an hour. Serve it with Dryfruits toppings or whatever you like just top it and Enjoyyy them...(Note: After rolling this dough you can also Decorate it by Silver Varq, I was searching for that, But could not find it, so did not use it...If you get that, You can decorate it with this..)

KFC Savory Diamonds

You must be Thinking that what is this KFC Savory Diamonds....hahahaha.....Yeah, its a 
K(C)SHEW-FENUGREEK-COCONUT Savory Diamonds (Namakpara).....;) 
Namakpara is Ribbon-like strips of pastry Delicately seasoned with cumin seeds, carom seeds, and caraway seeds and deep fried in Oil or Ghee (Clarified Butter). It requires Approximately 10 minutes to prepare and 20 minutes to cook. They are made from whole wheat flour (atta), Refined flour (maida).

One of the best foods for coffee and Tea in the Indian snack range is the Mathri. They can be plain or flavored with dried Fenugreek leaves (Methi) or Ajwain seeds. Crispy and crunchy they make a good accompaniment to every party. Another Indian snack for this Diwali festival..

Diwali is an ancient Hindu festival celebrated in autumn Every year. Diwali is the biggest and the brightest festival in India. The festival spiritually signifies the victory of light over darkness. As its just around the corner and now everyone will start thinking that what to make and what to eat in this Diwali ...Around a month before the festival starts, women, especially of my mother and grandmother's generations, get together in each others kitchens in turn to make the all-important Diwali snacks. Snack-making is very much a social activity, with older women turning out a dozen or more items and young people keeping the tradition alive by making at least a few.

Diwali snacks, made from chickpeas, rice, lentil and several other varieties of flours, are seasoned with different combination of spices, sesame seeds, fresh or dry fenugreek leaves or Coconut, into assorted shapes and usually deep-fried – though nowadays both mithai and snacks are available in low-fat, low-sugar and baked versions. It's common for family and friends to drop around to each other's houses with boxes of homemade snacks.

So, We #Foodiemonday Friends decided to take an Opportunity to introduce you guys with a different versions of Diwali Snacks, So our theme was #Diwalisavorysnacks, Here I am presenting very different and My own version of Namakpaara....These are the mixture of K(C)ashew, Dry Fenugreek leaves and Dry Coconut...I was thinking to make something different in this Diwali and finally I landed up with this!!! They are so flavorful, and So Crisp....When I was frying them my whole house was with Very nice Aroma of Fenugreek leaves and Coconut...!!! I Just fried them and tasted them...Mmmmmmmm...It was damn Tasty....So finally, I took a deep breath and was Satisfied with these output...So Sending this Entry in our #Foodiemonday #Bloghop Event and I am so excited to Present this. 1/2 Cup K(C)ashew Powder
1/2 Cup Wheat Flour
1/2 Cup All Purpose Flour
1tsp Kasoori Methi (Dry fenugreek leaves)
Salt to taste
Red chili Powder
pinch of Turmeric powder 
1 tsp Coriander Seeds
2 Tbsp Oil
Oil to fry
MIlk to make Dough

How to make Coconut Masala

1Tbsp Fennel seeds
1 Tbsp Coriander Seeds
1 Tbsp Cumin seeds
1 Tbsp Sesame Seeds
3 Tbsp Desiccated Coconut
1/2 tsp Garam Masala
1/2 tsp Red chili powder
Pinch of Salt


Let's make a Coconut Masala first.

1. Take a Pan and dry Roast the fennel seeds, Coriander seeds, Cumin seeds, and Sesame Seeds. Just turn off the gas when you get the nice aroma of these roasted seeds, and Take out them from the pan, and let them cool.

2. Take a blender and add these roasted seeds in the blender and make a lil coarse powder. Add this powder to the desiccated coconut powder and mix them well. 

3. Add red chili powder, Garam Masala and pinch of salt in it mix well and put it aside.

4. Now, Lets move on to make a dough of these shakkarpara....for This, Take a bowl and place the Cashew Powder in it.

5. Add Wheat flour, All purpose flour, Kasoori methi, Coconut masala which we made above, salt to taste, Red chili powder, Pinch of Turmeric Powder, Coriander seeds, And Oil, mix them very well and make a lil hard dough with Milk.

6. Now, make a smooth dough and Roll it square, Prick the roll and Now cut them in a diamond shape. 

7. Deep fry them golden brown in a deep pan. Take out them on a tissue paper and let them cool...

8. Place them in an Airtight container. Try out them And Enjoyyyyyy them in this Diwali :)

Sandwich Dhokla

Dhokla is a snack originating from Gujarat, India.... The Main ingredient is Chickpea flour and Rawa also! I love hid soft and spongy sandwich Dhokla with the amazing taste of Green chutney!!! 

Its just soo mouthwatering that you will keep on eating them one by one....with the step by step recipe of this easy Sandwich Dhokla Recipe, You can make them within a few minutes...make batter pour it, steam it and you are done :) 

"Das Khaman House", An Amazing place to have some great Dhokla in Ahmedabad city. They offer you with a variety of delicious khaman to dunk for. The one I personally love is the Curd Khaman and the Sev Khamani. One can really keep grabbing more and more. These Quick and easy to make Dhoklas are best enjoyed as a breakfast dish or even a late afternoon snack. A traditional Gujarati dish at festive meals. Deliciously sour. Dhoklas are a favorite Gujarati snack. As they are steamed, they are healthier than most other snacks. Snacks don't always have to be fat traps! 


Yellow Dhokla

1 cup Besan (Chickpea flour/gram flour)
2 tbsp Rava (Sooji)
1/2 tsp Eno Fruit salt
Salt to Taste
2 tbsp Sugar
2 tsp Baking soda

White Dhokla

2 cups Rava (semolina)
1/2 cup Sour curd or buttermilk
1/2 cup chopped coriander
1 tsp Green chili paste
1 tsp Soda Bicarb
2 Tbsp oil
Salt - to taste
2 cups water (Use only 11/2 cup if you have used buttermilk instead of curd).


Coriander leaves
Mint leaves few
1/2" Ginger
2 Green chilies
2 cloves of garlic
Lime 2 tsp
Salt to taste


1. Prepare Green chutney by blending all the Ingredients in a mixer and keep it aside.

2. Prepare two batters by mixing the ingredients of Yellow Dhokla and white Dhokla (except fruit salt) in separate bowls.

3. Pour some water in a Idli steamer and allow it to boil.

4. Grease a deep flat bottomed vessel (Thali) with oil. Make sure the vessel can fit into the steamer.

5. Take some hot water in a cup, add 1/2 tsp oil and the baking soda, pour it into the Bowl of yellow batter and stir well till froth appears. This ensures the Dhokla becomes soft and fluffy.

6. Then spread the green chutney over it and pour the white batter over it by repeating the same process as with the yellow batter and steam for 10 min. Allow it to cool.

7. Cut square shapes or shapes like Diamonds and serve hot. I love to temper it with Mustard seeds, Green Chili, Curry leaves!
