Spinach Carrot Thick Soup



A good old fashioned soup which is sure to appeal to people with different palates. This is fast, easy, and you can eat as much as you want because it tastes so good and it’s good for you! Carrots, spinach, basically anything with a gorgeous color that’s filled nutrients and antioxidants will find its way into a mouth.

I guarantee that this will make you walk over to the stove for another bowl… once you've finished scraping the bottom of the first one. And, you won’t have to feel guilty, eat as much as you want!!!
Layering flavor is the name of the game when you put this easy, and quick, soup together.

Mmmmm……My kitchen smells divine. When All of the ingredients have their own special scent and they complement one another so well. But that isn't as important as how they taste together. No worries, because this was a culinary marriage made in heaven.

Ingredients

For The Stock

2 cups chopped carrots
1 cup onions, chopped
3-4 Cloves Garlic

Other Ingredients: 

1 tsp low fat butter
1/4 cup chopped spinach (palak)
3-4 Curry Leaves
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1/8 tsp Oregano
1/8 tsp Mint Powder
1/2 Tbsp Tomato Ketchup
salt to taste

Method:

For the stock
Combine all the ingredients, add 5 cups of water and pressure cook for 2 to 3 whistles
When cooked, allow to cool, blend in a liquidizer and keep aside.






1. Heat the butter and sauté the spinach for a while. Take it in a blender and make a paste.






2. Add the stock, Curry leaves and Spinach paste together boil for a few minutes. Add salt. Onion Powder, Garlic Powder, Oregano and lil amount of Mint Powder. And Finally add Tomato ketch up in it. Let it cook for 1-2 Minutes.






3. Serve hot.
