Vegetable Kofta in Red Gravy


Vegetable kofta is a hugely popular dish on Indian restaurant menus all over the world.  probably because making it is a labor of love and takes time and effort. If you wish to experience a mouthful of Indian flavor, Kofta is a great choice. Though Kofta ranks as one of the most favored delectable Indian dishes, the dish is considered Middle East and South Asian cuisine for that matter.

The koftas in this dish can be made with Vegetables such as cabbage, Lauki (Bottle gourd), Carrot, mix veggies. It makes a great meal when served with Lachcha paratha or Jeera Rice!!! The fragrance of homemade Garam masala, Ohh I loved it so much......The perfect blend of spices and vegetables in this Curry are so delicious to eat!!! Hubby Enjoyed this delicious Curry with hot hot lachcha parathas.....One, Two...Ohhhh Third one also he had it ;) ....Prisha asked me...Mom which type of paratha is this??? hahahahha....She was wondering that what layers are there in this paratha.....I said her this is soooooo Yummyyyy Paratha...and she had it with her favorite ketch up and some amount of this curry which has no red chili powder...I always keep some amount of any curry or daal without chili for her, And I really appreciate that she never say No to any veggies....So with this happy ending of dinner, check out the step by step recipe here:


  
Ingredients

For Koftas

    4-5 Potatoes (boiled and mashed)
    1/2 cup carrot, Shredded
    1/2 cup Bottleguard, Shredded
    2 tsp lemon juice
    1 Tbsp gram flour
    1 tsp sugar.
    1 tsp coriander leaves
    Oil for deep fry
    Salt and chili powder to taste

For Red Gravy

    1/2 cup Almond and Cashew Nut powder
    2 Onions Roughly Chopped
    5-6 Cloves of Garlic, Roughly chopped
    1 Bowl Yogurt
    2 Tbsp fresh Cream
    Salt, Chili Powder, Turmeric Powder to Taste
    1 tsp Sugar
    1"  Ginger
    3 Tomatoes (Grinded)
    2 Tbsp butter
    1/2 Tbsp Kasoori methi
    1tsp coriander leaves

Method:

For Koftas

To make Koftas, mix mashed Potatoes, Carrot, lemon juice, salt, chili powder, Coriander leaves, sugar and Gram flour. Roll out into small balls and deep fry.






For the Gravy:

1. Heat butter in a Pan, add Onions and Garlic. Fry until light Brown.


2. Take a mixer jar and then add chopped Tomatoes, Ginger, Almond and Cashew Nut powder,  Yogurt, and Sauted Onions and Garlic. Make a paste of it.

3. Take a same pan in which onions were Sauted, add cumin seeds, lets them crackle, and add this Tomato paste in it, then add salt, chili powder, Garam Masala, Coriander Powder, Cook until the gravy becomes little thick add some Fresh Cream in it, add some kasoori methi in it cook for more 2-3 minutes and then add koftas.




4. Remove from flame after a min or 2.

Serve Hot with Lachcha Parathas..
