Matta Fried Rice with Cherry Tomato


Kerala Matta rice is an indigenous variety of rice grown in Palakkad District of Kerala, India. It is different from brown rice. It is popular in Kerala, India and Sri Lanka where it is used on a regular basis for idlies, appams and plain rice. Kerala Matta rice has been historically popular due to its rich and unique taste. It is used in preparations of rice-snacks like Kondattam, Murukku etc. Matta rice is traditionally double cooked. The rice is washed in a large pan and left to soak from 1 hour to overnight. The rice is drained and simmered with 4 to 8 parts water for 30 minutes. It is then covered and left for 15-20 minutes. The rice is then salted and boiled for another 15-20 minutes or until cooked. It is finally drained and left covered for a further 10-15 minutes before serving. I love that soft but grainy texture of this Rice....I had never ever tried anything with this rice but few days back went to the grocery store and as you know Nowadays we are going on healthy food, I thought that I should buy some brown rice this time....Somewhere I read that these Rice are so healthy, and go this Info from Google about its health benefits..like........



 Other than its unique taste, the red Pericarp of this rice variety has a high content of nutrients. Pericarp is the healthy outer coat of the rice grain. More often than not, polished rice varieties tend to lose this valuable layer when they are ground out to appear shiny and clean. Matta rice or Kerala red rice, however, retains this outer coat for all its natural goodness. With increased quantities of minerals, vitamins, fiber and more, Matta rice goes for gold with its contribution to a healthier diet. 


Matta Rice is also a great source of magnesium. Magnesium is an important macro-mineral required every day for good health. It is used in several enzymatic reactions in your body, and its deficiency can lead to multiple health conditions. Consuming whole Matta rice grains can significantly lower your risk of heart disease and certain cancers. Due to the lower content of fat, saturated fat and cholesterol, Matta rice is heart friendly, keeping those important blood vessels clear of clogs and clots.

So using this Rice I am gonna make fried rice, These vegetable fried rice were so so delicious in my dinner, and that tiny Tomatoes were like cherry on the cake...These Cherry Tomatoes were so cute to serve and they looks so inviting on table....And Loved the taste of these brown rice....Addition of vegetables makes these rice more Healthy and Nutritious. INGREDIENTS:

    1 1/2 cup Kerala Matta Rice (soaked for an hour and drained)
    2 tsp oil
    1 tsp Cumin seeds
    1 medium onion (thinly sliced)
    1/2 Cup Carrots, Chopped
    1/2 Cup Cabbage, Chopped
    2 Tbsp Capsicum
    1 Tbsp Garlic, thinly sliced
    2 tsp ginger paste
    Pinch Turmeric Powder
    2 green chillies, finely chopped
    2 Tbsp Soy sauce
    1 Tbsp Tomato ketch up
    1/2 Tbsp Red chili sauce
    2 tbsp chopped coriander (dhania)
    Salt to taste
    8-10 cherry Tomatoes

METHOD:

    1. Heat the oil in a thick bottomed vessel and Add cumin seeds and add the onions and Garlic and   sauté on a medium flame till they turn golden brown.

   2. Add the Chopped capsicum and ginger paste, green chillies and Cook for 2-3 minute.

   3. Add the chopped Cabbage and Carrots sauté on a medium flame for another 2 minute.

   4. Now add Salt, Turmeric Powder, Soy Sauce, Tomato ketch up and red chili sauce and again cook it for a minute.

   5. Add Cooked Brown rice, and Saute them with the vegetables on a high flame for a minute.

   6. Take Out it from the vessel and transfer it in a bowl and serve it hot :)

Serve hot!!!!!!!!!!
