Carrot Halwa (Gajar ka Halwa)








The All Time Favorite Dessert of every Indian....Its a full of Nutrition and Healthy Dessert.....Its a sweet dessert pudding associated mainly with the North India and Pakistan. It is made by placing grated carrot in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly. It is often served with a garnish of almonds and pistachios. The nuts and other items used are first sauted in ghee, a South Asian clarified butter. Now Gajar Ka Halwa is a popular worldwide dessert with many variations such as Red Velvet Halwa, Carrot and Beetroot Halwa, and Cheesy Carrot Halwa.


Ingredients:

1 kg Carrots
1/2 liter Milk
200 grams Mawa
1 teaspoon Cardamom seeds or Powder
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
250 grams Sugar

Method:

1. Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.

2. Put the Milk to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.




3. Cook on a low flame for 1 hour stirring occasionally. Add Mawa, and cook it for another 3-4 minutes. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.





4. Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.

5. Remove the Gajar ka halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.
