Cheese Beetroot Paratha (Cheese Beetroot Flatbread)







A Super Healthy, and Yummy Beetroot Paratha.....But the best part of being it yummy is CHEESE!!!
I love cheese!! so its a Cheese Beetroot Paratha.....Now I am trying to give some amount of beetroot to my child...If I simply give her Beetroot she just ran away and telling me BIG NO by having it....As everyone knows this recipe....But If you add loads of cheese...It goes Amazing.....Try them for once...They are not stuffed...But the ingredients are simply added in Dough only...Here's the Recipe....

Ingredients:

2 cups Whole wheat flour (for Paratha & few for dusting)
1 cup grated Beetroot
1/2 tbsp Grated Processed Cheese
1/4 tsp finely chopped chilli
1/2 tsp Red chilli powder
1/4 tsp Jeera Powder
1/2 tsp Salt
1/4 tsp sugar
1/4 tsp Sesame Seeds
1/4 tsp Reisins
1/4 tsp Grated Ginger
1/2 tsp Oil
Ghee 1 tbsp for greasing

Method:

1.In a kadai, heat oil and add Jeera powder, grated beetroot, green chilli & chilli powder.
saute for 2 minutes.

2. Then add salt and sugar.Mix well. cook for another 1 minute. Allow it to cool. And add Grated Cheese.

3. In a bowl, mix the flour and above cool stuffing in it and if need water add it & knead well & make a smooth dough.

4. Dust it with the flour on both sides and flatten it with the rolling pin.

5. Preheat the tawa and put the Paratha and When it turns with brown spots, turnover and apply ghee on both sides.

6. Yummy beetroot paratha is ready. Serve with butter and Anything whatever you like!!! :)

Punjabi Dum Aloo




Punjabi Dum Aloo recipe is the most popular north Indian potato curry recipe, simply cooked with potatoes and creamy based kasuri methi flavored gravy..Potato/Aloo is one of my family favorite vegetable. Potato is one quick cooking veg and anything with potato will be a hit with kids n adults too. A week back bought baby potatoes mainly to make this creamy, spicy n delicious Dum Aloo. There are lots of version for this popular. The process n preparation might look as difficult but its really so simple and easy to make. This Dum Aloo goes well with Naan, Phulkas, Chapathi n also with some mild Pulao.

Ingredients:

Baby Potato (Peel boiled and prick them with a fork) – 15 small
Finely Chopped Onion – 1 large
Thick Curd or Dahi – 3/4 cup
Bay Leaf or Tej Patta – 2 nos.
A Pinch Hing -
Turmeric Powder – 1/4 tbsp
Red Chili Powder – 1/2 tbsp
Garlic-Ginger Paste – 1 tbsp
Coriander Seeds – 1 tbsp
Cumin Seeds – 1/2 tbsp
Green Cardamom – 1 pod
Cinnaman or Dal Chini – 1 nos.
Cloves – 4 nos.
Cashew – 8-10 nos.
Kasoori Methi – 1/2 tbsp
Sugar (Optional) – 1 tbsp
Oil for frying
Finely Chopped Coriander leaves – 2-3 tbsp
Salt as per taste -



Method:

1. Heat the oil in a pan on medium flame, add boiled potatoes.

2. Shallow fry it till they turns little golden brown and keep aside.

3. In a grinder, add coriander seeds, cumin seeds, cardamom pod, cinnamon stick, cloves and cashew nuts grind it and keep aside.

4. Heat the oil in a pan on medium flame, add a pinch of Asafoetida and saute for 8-10 seconds.
Add bay leaves and onion.

5. Fry it till onion turns light golden brown. Add ginger garlic paste and kaju paste, saute for 30 seconds.

6. Add dry powder and mix well. In a bowl, beat curd and slowly add it in pan.

7. Add turmeric powder and red chill powder, mix well. Stir continuously until oil starts to separate.

8. Add shallow fried potatoes, kasuri methi, sugar and salt, cook for 2 minutes.

9. Add water and bring it to boil.

10. When it starts to boil, cook covered on low flame until you get the desired consistency of gravy.

Garnish with coriander leaves.

Serve hot Punjabi Dum Aloo with Rice or Paratha or Roti.

Spinach Fritters (Palak Pakode)








Spinach Fritters Or Palak Pakoda are my favorite :) just love them and these are healthy fritters as its made purely from greens of spinach. These Spinach Fritters are so easy to make. Most important factor is its crispy, crunchy, delicious, yum and its crunchy even when it is not hot Or you eat after some time.  Spinach Fritters goes well with pav, bread accompanied with green chutney and sauce. Also a cup of tea Or coffee. Monsoon is  a great time to have pakodas as the fun is altogether different. But for a person like me I can have pakodas all the time of the year provided its made of spinach Or fenugreek. So here is the Recipe.............


Ingredients:

25-26 Spinach leaves (cleaned and Chopped)
3 cups oil
1 cup gram flour (besan) Or as required
1 t/s baking soda (optional)
4 tbsp water Or as consistency required
3 tbsp white sesame seeds (til)
1 t/s Asofoetida (hing)
2 tbsp chat masala
1 tbsp fennel seed powder
1.5 tbsp Cumin seed
1.5 tbsp Red chili powder
½ t/s Turmeric
1 t/s coriander seed powder (Dhaniya)
salt as per taste


Method:

1. In a Mixing bowl add gram flour, salt and all spices (turmeric, hing, chat masala, red chili powder, cumin seeds, fennel seed powder, dhaniya powder) along with sesame seeds. Combine all nicely with a spoon Or your finger tips.

2. Add water to it to form a smooth paste. Ensure no lumps are formed. The consistency should be or thick consistency should be able to cover the spinach leaves.

3. Lastly add baking powder and keep it aside for 5 to 7 mins.

4. In the meanwhile take spinach leaves wash and wipe them with a cloth Or napkin, Normally People use whole leaves but just for a change here I had chopped them....You can use Whole leave also...then add chopped spinach leaves in smooth paste..

5. Now take a deep frying pan. Add oil allow the oil to get hot. Place the gas on low heat. Gently leave them in hot oil. Repeat the same with another pakodas. Depending on your vessel size fry about 5 to 6 of fritters at one time.

6. Fry them until golden brown and crisp from both sides. Place them on napkin to absorb excess oil. Serve hot with tomato Or chili ketchup.

Carrot Halwa (Gajar ka Halwa)








The All Time Favorite Dessert of every Indian....Its a full of Nutrition and Healthy Dessert.....Its a sweet dessert pudding associated mainly with the North India and Pakistan. It is made by placing grated carrot in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly. It is often served with a garnish of almonds and pistachios. The nuts and other items used are first sauted in ghee, a South Asian clarified butter. Now Gajar Ka Halwa is a popular worldwide dessert with many variations such as Red Velvet Halwa, Carrot and Beetroot Halwa, and Cheesy Carrot Halwa.


Ingredients:

1 kg Carrots
1/2 liter Milk
200 grams Mawa
1 teaspoon Cardamom seeds or Powder
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
250 grams Sugar

Method:

1. Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.

2. Put the Milk to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.




3. Cook on a low flame for 1 hour stirring occasionally. Add Mawa, and cook it for another 3-4 minutes. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.





4. Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.

5. Remove the Gajar ka halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.

Brown Bread Upma





Bread Upma is A tasty snack that is easy to make With great taste..if you are bored having some usual snacked... Then Bread Upma is the perfect idea for having it.... For a twist and to make it healthy I am using Brown bread here...so it becomes healthy and tempting....



Ingredients:

6-8 slices Brown Bread
1 medium Onion (chopped)
2 Green Chillies (chopped)
1/4 tsp Mustard Seeds
1/2 tsp Cumin Seeds
1/4 tsp Turmeric Powder
1/2 tsp Red Chilli Powder
A pinch of Asafoetida (Hing)
4 tbsp Oil
1 tsp Lemon Juice
2 tbsp Fresh Coriander Leaves (chopped)

Method:

1. Cut the bread slices into small cubes without crumbling them.

2. In a wok (kadhai) heat oil and add a pinch of asafoetida, cumin seeds and mustard seeds and cook till it starts to splutter.

3. Add onion to it and saute for some time till pink.

4. Add turmeric powder, red chilli powder and mix well. Toss in the bread and mix again without breaking them.

5. Cook for 2 minutes. You can add a little water to it if required.

6. Add lemon juice, green chillies and coriander leaves and toss.

Serve hot.

Corn Spinach Cheese Wrapes








Very Tangy and Tasty Corn Spinach Cheese Wrapes, Tonight in Dinner......Simply having it and Enjoying with Comedy Movie......"Haseena Maan Jaegi!!!!".....Love this movie.....And the Wrapes  Makes it most memorable.....Here's the Recipe...........


Ingredients

4 cups Spinach (finely chopped)
½ cup sweet Corn Kernels (cooked)
½ cup Skimmed Milk Curd (beaten till smooth)
½ cup Cheese Spread
½ cup Onion (finely chopped)
2 tsp Garlic (minced)
1 tsp Ginger (minced)
1 tsp Chili Powder
½ tsp Turmeric Powder
1 tsp Garam Masala Powder
Salt to taste
2 tsp Oil


Method

1. Heat oil in a nonstick frying pan.

2. Add onion, garlic and ginger. Saute till the fragrant can be smelt.

3. Combine chili powder, turmeric powder and Garam masala powder with 2 tbsp of water.

4. Add the Masala mixture to the frying pan. Stir fry for 1 minute.

5. Add spinach and salt. Cover the pan and cook till the spinach is well cooked, on low flame.

6. Add corn kernels and curd. Mix well.

7. Simmer the mixture till it gets thick.

8. Remove from fire and roll up equal amounts in wrapes or rotis with adding cheese spread on the top of the mixture.

Chocolate vanilla cheesecake

INGREDIENTS

Crust:

1 1/2 cups finely crushed Chocolate Biscuits (I prefer OREO)
1/4 cup granulated sugar
1/4 teaspoon vanilla extract
6 tablespoons butter, melted

Cheesecake:

2 Cup cream cheese, softened
1 cup sour cream
2 tablespoons cornstarch
1 cup granulated sugar
1/2 teaspoon vanilla

White Chocolate Mousse:

1 cup heavy whipping cream
1/4 teaspoon vanilla extract
2 tablespoons powdered sugar
1 tablespoon cream cheese, softened
1 tablespoon white chocolate baking squares, melted

Sweetened Whipped Cream:
1 cup heavy whipping cream
1 tablespoon powdered sugar


Method:


1. In a medium bowl, mix the Biscuits crumbs and sugar. Add vanilla and mix; then stir in the melted butter.

2. Press the mixture into the bottom and just barely up the sides of a 9-inch spring form pan (could also use a 10-inch pan although all the layers will be slightly thinner). Put in the freezer for 10-15 Minutes.

3. For the cheesecake layer, in a medium bowl or the bowl of a stand mixer, beat the cream cheese with an electric handheld mixer (or stand mixer) until soft and creamy. Add the sour cream, cornstarch, sugar and vanilla and mix until smooth.

4. Spread the cheesecake over the cooled crust and again put in the refrigerator for at least 1-2 hour.

5. For the white chocolate mousse, in a medium bowl, beat the cream and vanilla with an electric mixer (handheld or stand mixer) until soft peaks form. Add the powdered sugar and mix until combined and the peaks are slightly stiffer. In a separate bowl, beat the cream cheese until fluffy. Add the white chocolate and mix until smooth and creamy. Fold in the whipped cream, taking care not to deflate the whipped cream, and mix gently with a rubber spatula, lifting and turning the cream, until the mousse is combined and creamy.

6. Spread the white chocolate mousse over the cooled cheesecake.

7. If you want you can also spread Chocolate Sos on it and again refrigerate it overnight...I am suggesting overnight because when I had made the cheesecake first time...I'd spread Chcolate sos on it..and put in freezer for 1-2 hour...when I was decorating my cake the chocolate sos got melt gradually and my decoration was just messed!!!...So I prefer to put in the fridge for ocernight or 809 hours...After that decorate your cake your way....

So my yummy cheesecake is ready to serve!!!!

Moong dal Kachori (Fried Dumplings stuffed with lentils)








Kachori is supposed to have originated in Uttar Pradesh or Rajasthan, India. In these states it is usually a round flattened ball made of fine flour filled with a stuffing of baked mixture of yellow moong dal or Urad Dal (crushed and washed horse beans), besan (crushed and washed gram flour), black pepper, red chili powder, salt and other spices.


Additionally in Rajasthani cuisine, the Pyaaj Kachori (onion kachori) is very famous. Another form of Kachori which is famous in Rajasthan is the Mawa Kachori. It is a sweet dish which is dipped in sugar syrup. Here we are taking tour of Moong daal kachori..Here we go.......


Ingredients:


For dough:

2 cups Maida, (All purpose Flour);
1 Tsp salt
3-4 drops of lemon juice
2 Tbsp oil
½ cup of water

For Stuffing:

¼ Cup Moong dal (Green or Yellow lentil)
1  Tsp cumin seeds
¼ Tsp Asafoetida
1 Tsp Soanf (fennel seeds)
½ Tsp Red Chili powder;
1 Tsp  Garam masala;
1 Tsp  Amchur powder (Dry mango powder);
1 Tbsp Besan (Gram flour);
1 Tsp  Ajwain (carom seeds);
1 Tsp  Coriander powder;
½ Tsp Cumin powder;
2 Tbsp Oil;
¼ Tsp salt.


Method

1. Wash dal properly and soak it in water for at least 30 minutes (preferably for 2-3 hours). Drain water and keep aside.

2. In a big bowl mix flour with salt and oil. Add water slowly and make a soft dough. Cover the dough and let it rest for 20-30 minutes. (The reason of adding lemon juice is to make kachori's layer more khasta, when we fry them the small spots appear on kachori this is only because of Lemon juice.)

3. Heat Oil in a pan. Add cumin seeds and Ajwain. When they start sizzle, put asafoetida, coriander powder, cumin powder, Amchur, red chili powder, and garam masala powder.

4. Stir fry for 30 seconds then add besan and stir fry for one minute on low medium flame.

5. Now add soaked moong dal and a bit of salt, mix well and fry for 7-10 minutes. Turn off the flame and let the mixture cool off.

6. Take a small piece of the dough and with your fingers flatten the edges and make into 4-inch circle. Place 1 teaspoon of filling in the center of the circle dough and seal it by combining the dough into the center.

7. Now roll this dough into a 3-4-inch circle. Make sure the filling does not spill out. Repeat these steps for the rest of the dough.

8. Heat oil in a frying pan on low-medium heat. Add the kachoris and fry them until golden-brown on both sides.

9. Serve them with Tamarind Sauce or Green chutney, Or make chat of kachoris....



I love it so much....Kachori is my favourite snack..

Stir Fried Vegetables With Pasta and White Baked Beans







Me and my Hubby, On our weekend we often have this dish to have light Lunch or Dinner, Its again healthy that all the vegetables are simply stir fried and because of the spices like garlic powder and onion powder etc, The taste just cant make us to have it for another round of serve. And the Recipe will make your stress meter Happy!!!!!!


Ingredients:

1 Tbsp Olive Oil
2 Tbsp medium sliced Onion sliced
1 Cup diagonally sliced Carrots
2 Cups Broccoli Florets r Cauliflower Florets
1/2 cup capsicum or Bell Pepper, Cut in to strips
1 Cup Pasta, Your choice
1 Cup White Baked Beans
1 Tbsp Soy Sauce
1 Tbsp Red Chili Sauce
1 Tsp Garlic Powder
1 Tsp Onion Powder
1 Tsp Oregano
1 Tsp Mint Powder
Salt to Taste.


Method:

1. Heat the Olive Oil in large deep Skillet on medium-high Heat. Add Onion ans Carrots, Stir fry for       2 minutes. Add capsicum or Bell pepper and cook for another 2 minutes.

2. Add Remaining Vegetables, stir fry them for 5 to 7 minutes or until vegetables are tender-crisp

3. Add Soy sauce, and chill sauce, Saute them for a minute, Then add  Pasta and Baked beans in it and again fry for a minute, (I literally like this combination with pasta and baked beans, Trust me the dish goes Ummmmmmm) after that add Salt, Garlic powder, Onion Powder, Oregano, Mint powder. Stir Fry until well blended.
