Malpua Rabdi



India, this is a country with full of interesting traditions of different religion, This is also a place of different varieties of food, including Traditional and non-traditional sweets. Traditional Sweets have a huge number of different varieties of sweets. You will find number of sweets from Kashmir to kanyakumari and from Gujarat to West Bengal. North Indian Sweets are as rich in taste and full of flavors, As in If you go to Rajasthan You will find Royal Sweets which are fully loaded with Desi Pure Ghee, (Pure Clarified Butter), And what to say about Bengali Sweets, They are as sweet as the people of Bengal.  Huge varieties of Bengali sweets are the most popular in India. 



Coming back to your Hometown is the most amazing feeling, and when its at your momies place...I even can’t explain the feelings. This is the most tickling feeling when I was counting my days to come back at the place where you born and brought up, your childhood were full of joy at that place, your friends, and the areas where you used to go every day. No doubt, there is a huge difference when I was in ahmedabad, Then and Now, The city is full of Traffic, huge infrastructures, and standard of living is changed. I am enjoying every moment, sometimes the traffic irritates me a lot, I hate to drive after 6 o’clock here....But at the same time love to go on drive late night with my favourite music, Of course I miss you Himanshu... Late night drive, the roads are bit empty, somehow slow and bit rough driving...This moments are amazing. And the food, So many new restaurants, varieties of food, But Being a Rajasthani Girl I must need to try my hands in all the popular Rajasthani traditional sweet recipes. Everyone must have heard about the most popular recipe and amazing combination of Malpua and Rabdi. But when this Malpua batter is made with Rabdi and then again serve with rich and delicious Rabdi then the combination is by far outstanding. Its very normal that when we are at our mom’s place, She treat us like a princess, every time when I am at home, she used to make food of my choice only, and everyone at home have to east that only which I want ;) I know sometimes its torture for my brothers..Lol But thts Ok..I enjoy that also ;) and they tease me with different names which I literally don’t like.




Every mom loves to serve their kids a food which they like, It’s so rare when She got treated like a queen by her kids. When you stay as a single family at home, Somewhere you feel that “I wish someone make this food for me” ....I do feel this sometimes when I was in Doha..This same feeling I was wondering for my mom, As she used to make these much different varieties of food for her three kids. So I decided to give a treat to her in our 50th #Foodiemonday #Bloghop Event, with the theme of #TraditionalSweets . Its a Golden Jubilee for our Foodiemnonday Team.  My Mom loves Malpua and I dedicate this Post to my Mother who is a big lover of Malpua and rabdi. I served this extremely delicious Traditional Sweet of Rajsthan to her and she was so so happy by enjoying them. How to make Malpua

Ingredients:

500 ml Full Fat Milk
1 Cup All purpose Flour
½ tsp Powder Sugar
½ Cup Milk
¼ tsp Baking powder
1 Cup Sugar
½ Cup Water
½ tsp Cardamom Powder
4-5 Saffron strands

Method:

1.       Heat a deep pan with milk and bring the milk to the boil and reach the quantity of ¼ thick.


2.       Let the thick milk come to the room temperature, then add Flour in it and mix it well.


3.       Now add Powder Sugar and Milk and make the batter with dropping consistency.

4.    Meanwhile, let’s make sugar syrup, For this Take a deep pan and add Sugar and water and cook it until the one strand of Sugar syrup is ready. Add cardamom powder and saffron strands in it.


5.       Now take a non-stick pan and apply ghee on it, and add one spoonful of batter on it spread it lil and cook the Malpua well from both the sides.



6.       Take out it from the pan and dip it in sugar syrup and put them in another plate.
7.       Now serve it with Rabdi and garnish them with Pistachio and Almonds and some Rose petals.

Chickpea and Oats Burrito


The history of Mexican food is a long and diverse one. It is believed that authentic Mexican food might have been derived from the Mayan Indians. They were traditionally nomadic hunters and gatherers. Corn tortillas with bean paste were a common food item; but they also ate wild game, tropic fruits, and fish. The early natives of Mexico did not have ovens, instead they heated food over and open fire, using cast iron skillets and ceramic ware. Another method was steaming. Frying was also a popular method.

We all know that chili peppers play a big part in Mexican food.  These and salt were so important to the peoples of central Mexico that special religious fasts involved avoiding them. The Mexican staple, the tortilla, is still prepared much the same way as it was traditionally.  Maize, and lime, cooked on a stone slab.  Tamales, a type of corn cake sometimes accompanied by tomato, also survived.  But the favorite dishes evolved as new foods were introduced from Spain...Some key ingredients of Mexican foods are Onion, Garlic, Cheese, Rice and some meat and beef. Over the centuries, traditional Mexican cuisine was subject to the influence of other nations. While ingredients and cooking methods have changed over the course of history, the traditions of Mexican cooking have proven resilient, reflecting outside influences yet retaining distinct cultural characteristics.


There are some famous Mexican food like Salsa, Burritos, Quesadillas, Tacos and many more...A burrito is a type of Mexican and Tex-Mex food, consisting of a wheat flour or multi flour tortilla wrapped or folded into a cylindrical shape to completely enclose the filling. The flour tortilla is usually lightly grilled or steamed, to soften it and make it more pliable. Here This Chickpea and Oats Burrito is a veg recipe to enjoy your meal with Apple and Chili Salsa and some sour cream, which makes this Burrito heavenly delicious and yummy!! This is our48th #Foodiemonday #Bloghop Event and we are celebrating this event with #MexicanCuisine recipes and I am contributing this Chickpea and Oats Burrito recipe which is inspired by chef Ajay Chopra's recipe. Ingredients:

4 Multi grain Tortillas
2 Tbsp Oil
1/2 tsp Cumin seeds
1 Cup Onion chopped
1" Ginger Chopped
6-7 Chopped Garlic
1/2 Cup Green Capsicum
2 Big Tomatoes Chopped
1/2 tsp Garam Masala powder
1/2 tsp Mexican Seasoning
1/2 tsp Red chili Powder
Salt to taste
1 Cup Instant rolled oats (You can take instant Masala Oats packet too)  



Method:

1. Take a deep pan and heat it with Oil, and add Cumin seeds, then add chopped Onions, Garlic and Ginger and cook them until onion turns pink.



2. Next add chopped green capsicum and cook them until it turns bit soft, and then add chopped Tomatoes and let the tomatoes cook very well. (Note: You can take colorful Bell peppers too if you want to make the stuffing more colorful.)



3. After tomatoes cooked very well add all the spices including Mexican spices and salt, Mix well then add water in the mixture and add Oats in this mixture. Let the Oats cook perfectly. (Note: You can simply take the packet of instant Masala Oats packet, in which you don't need to add more spices in this, Though If you want to make stuffing more spicy you can always add spice powders.)


4. Finally add Chickpea in the Oats Mixture, Mix them all well and turn off the Gas. Transfer this mixture to another bowl.


5. Now Take some Tortillas, You can take Homemade too, heat them on Skillet for a minute or two to make them lil warm and pliable. apply some sour cream on it and place this Chickpea and oats mixture in the middle of the Tortillas like this, And roll it tight and properly. (Note: Any Tortillas can be use in this Burritos, I am using Multi Grain Tortillas, and they are frozen one,You can make fresh one too at home. )


Apple Chili Salsa

Ingredients

1 Cup Chopped Apple
2 Red Chili
3 Tbsp Chopped Coriander leaves
Salt to taste
1 Tbsp Lemon juice

Method:

 1. Cut the apples in small pieces and place them in a bowl, deseed the Red chilies so that your salsa will not be so so spicy, Mix them well, add salt and squi fresh lime and add chopped coriander leaves.

2. Mix all very well. Your delicious salsa is ready to serve.

Eggless Creamcheese Bars


Cream cheese Bars are the yummiest, delicious and Easy to make Teatime Bars. They are full of energy, Full of calories, and perfect for your kids lunchbox. One Bar will make your kid's tummy full. walnuts are very healthy for everyone.

Adding healthful amounts of nuts like walnuts to your diet can help you to maintain your ideal weight over time. Everyday 2-3 walnuts are so much healthy for our body, Brain and eyes too. perfect for kids to have it. I make sure to give 3-4 blanched Almonds, and walnuts to Prisha everyday in morning. And she loves to have blanched almonds. Last week bought one big bottle of cream cheese and was wondering what to make with this cream cheese as I am leaving for India next week. So need to finish it off as soon as possible. Everyday making some salads, some spreading on Bread and having it in our breakfast, Yesterday thinking to use good amount of it and tried to make some healthy cream cheese bars. They came out so so perfect and yummy as well. Prisha loved it so much even me and Himanshu too loved it. But because of good amount of fat in it, preferring to give these yummy bars to your kids ;) As I made this by keeping kids in my mind, because these bars contains good amount of butter, cream cheese, chocolates, cherries, condense milk...yeah....Guilt pleasure it is ;)


You can always use whole wheat flour too to make this cake bars. Instead of using condense milk and yogurt you can use eggs. add 3 eggs if you are making with eggs. You can simply enjoy these bars by putting them in fridge for 3-4 days. Well at my place  they are already finished. So to give a perfect treat to your child, make this super delicious bars at home, and surprise them :) Check out the step by step recipe below.



Ingredients:

110 gm Butter
75 gm Cream cheese
100gm Castor Sugar
2 Tbsp Yogurt
3 Tbsp Condense Milk
1 tsp Vanilla Essence
110 gm All purpose Flour
1/2 tsp Baking Soda
1 tsp Baking Powder
50 gm Chocolate chips
20 gm Walnuts, chopped
40 gm Sweet Cherries



Method:

1. Take a Bowl, and whisk Butter, Cream Cheese and Sugar until it gets light and fluffy.



2. Now add Condense milk and yogurt and mix them properly. Add Vanilla Essence and mix all well.


3. Now add Dry Ingredients in wet mixture which are APF, Baking Soda, Baking Powder and fold it well, And Finally add Chocolate chips, chopped walnuts, chopped Sweet cherries and fold this mixture very well. The consistency should not be so dropping one. it should be little tight and pouring.



4. Transfer this Batter to greased Cake tin and bake it on 190 degree C for 25-30 minutes.



5. Take out the Cake tin from the oven let it be come on room temperature and unmould from the cake pan.

Aloo Paneer Rings




A monsoon is a seasonal change in the direction of the prevailing, or strongest, winds of a region. Monsoons cause wet and dry seasons throughout much of the tropics. Monsoons are most often associated with the Indian Ocean. Rainy season brings pleasure and happiness with the drops falling from heaven. The season that attempts bringing a cool climate is always commendable.

While monsoons are remembered for the wet mud smell, the enchanting rains, the cool breeze that sweeps of your face. Thats the feeling of monsoon..Thats the desire of monsoon...and I love it...Monsoon has started pouring everywhere in India, Though not in Qatar :( But My family, friends says that its heavy rain here, and I start Imaging that Wooow thts so so Awesome. Eagerly waiting to Enjoy this rainy season at my place in India...Well, I don't need to wait for so long, As me going to India right after 10 days :) Yipppeeee.....Mom I am coming :) I am literally Feeling so so excited to meet my family specially in this season. Here in Qatar, its hell out Hot (49- 50 Degree) in daytime, and humidity is on high...Badly needs the change of weather. In this weather I cant think of having that Hot mug of coffee and some Pakodas...Though To make that feeling, We enjoyed our monsoon stuff with lowest temperature of our AC ;)  


If you are in India every state has its own monsoon delicacies to suit the taste buds. Hot hot Pakoras, Spicy chaat, hot soup, masala chai or Coffee and the list goes on and on. I have tried something different from pakodas, Yes its a fried stuff, but for me in rainy season I am not going to think about calories and all....I love to enjoy this Aloo Paneer Fried rings with Pudine ki chutney..So yummmm...We enjoyed this delicious Aloo paneer rings in our teatime snacks....As they are stuffed with Potatoes, Paneer, Bread slices, Some spices, Onions. and lots of chopped coriander leaves. They are covered with cornstarch slurry and bread crumbs. A perfect snack to enjoy in this Monsoon...I am gonna make these Rings when I will be at my Mom's home....Will make those yummy rings for my family too, My Mom gonna love this for sure :) 


As this is our 47th #foodiemonday #Bloghop Event..Yes we are very much near to complete our golden jubilee....Sounds awesome na....Yeah...This time we all has decided to celebrate #Monsoonmadness as our bloghop theme...It is worth to share the recipes in this rainy season. :) I have tried to make very easy and delicious Aloo Paneer Rings for a change from Pakodas and other stuffs. They are tasty, yummy and mouthwatering Potato rings...So, You guys make this yummy rings in this ongoing rainy season and get so many Woooows from  your family ;)



.Ingredients

1 Potato Large, boiled or steamed, peeled and mashed
4 Bread slices
1 Cup Paneer, Shredded
1/4 Cup Finely chopped onion
2 Tbsp Coriander leaves, finely chopped
1 tsp Grated ginger
1 tsp Grated garlic
1 tsp Minced green chili
1/ tsp Garam masala
1 tsp Cumin seeds 
2 tsp Fresh lemon juice
Salt To Taste
Oil for frying
2 Tbsp Corn Flour
Salt To Taste
1/4 Cup Water   

Method:



1. Take a large Bowl and break 4 slices of fresh breads in it, and add mashed boiled potatoes, Shredded Paneer, and all the ingredients, Mix together all the ingredients and make a dough.




2. Divide the mixture into small portions and give donut like shape. keep it aside.


3. Now in another bowl, add in corn flour and gradually pour in the water; mixing continuously.



4. In a deep pan, heat the oil and dip the donut balls into cornstarch mixture and coat with bread crumbs and deep fry until golden brown.

Cheese Balls



Cheese is a food derived from milk that is produced in a wide range of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, the milk is usually acidified, and adding the enzyme rennet causes coagulation. The solids are separated and pressed into final form. Some cheeses have molds on the rind or throughout. Most cheeses melt at cooking temperature.

Cheese Balls are perfect snack to serve in tea time. You can make it more spicy or less spicy. Addition of some vegetables enhance the taste and nice color of stuffing. They are stuffed with lots of cheese, Potato as a base, Some Green capsicum, Green chilies, Ginger garlic paste....You can add other ingredients of your choice...But these are the main ingredients which you need to make these yummy cheese balls. Few Last days are remained for Ramadan, and in Ramadan month Himanshu
used to come early from the office, he is at home by around 5 or 5.30 pm..and This is the time when you are hungry and need something to much...I used to make some snacks in this month, mostly instant and hot snacks...sometimes I make Bhajias, Dhoklas, sandwiches..This time I made some cheesy cheese Balls. Prisha too loved this yummy cheese Balls....as I made them before hianshu came...And half of these Cheese Balls were finished by me and prisha...Lol...He said you made only these much balls??? And I said No..I made good amount of cheese balls, One thing is that I was taking photos of them, That time I had One or two ;) Then when I finished clicking them...Prisha and me again had them...Rest all are yours ;) And he was telling yaa yaa I can see ;) Resttttt all are mine...Lol I didn't made so much spicy cheesy balls as Prisha will not able to eat spicy food. 


You can serve them with simple ketchup or with cheese spread or Cream cheese, and you will love it to enjoy...I have used Mozzarella cheese and some veggies...So you guys enjoy these cheesy recipe of Cheese Balls :)


Ingredients:

1 Potato, Boiled
1/2 Cup Cheese
1/2 Green Capsicum
1/4 tsp. Ginger Garlic Paste
1 tsp. Oregano
3/4 tsp. Red Chili Flakes
Pinch Of Pepper
1 Tbsp Cornflour
2 Tbsp Maida
11/2 Tbsp Water
1 Cup Bread Crumbs (You can use Fresh Bread Crumbs too)

Method:

1. In a bowl, add the grated cheese, Boiled and Mashed potato, green capsicum, coriander leaves, red chili flakes, crushed oregano, little pepper, garlic paste, Cornflour and salt and mix everything well.
Apply little oil on your palms and start making little balls from the mixture.




2. In a bowl, add the all purpose flour and water and mix them till you get a pouring consistency batter. On a kitchen platform, Put some plain flour and bread Crumbs.






3. Roll the cheese balls in the plain flour, dip them in the plain flour batter and then roll them in the bread crumbs.



 5. Deep fry the well Coated cheese balls just before you serve them.
