Chickpeas with Spinach and Mint Bhatura


You must have heard about Chhole Bhature, I had post this Chhole bhature recipe earlier!! its a combination of chickpea curry served with deep fried flour pooris. I always like to make something healthy with different versions, So, I just tried to give some twist to these Chhole Bhature.....Here, I am going to make Chickpeas with Spinach and the Bhaturas are Mint Bhatura. These are an all time favorite Punjabi dish. They can be eaten in breakfast as well as in lunch.

As My husband's Office schedule is very boring, I personally Don't like it, He also :( Sorry Hubby ;) But, Thats true!!! :) He used to leave the home by 8 O'clock in morning. So, You can imagine I have to wake up by at least 6.30Am....which I hate :( Because, Since my childhood I like to sleep long and I wake up late!!!

But yes, As we grow up things are changed, We are changed a bit...Time is changed and circumstances are also changed!!! Well, sometimes I enjoy this life If I am going to make something twisted or new in my hubby's Lunch Tiffin, I wake up in the morning very quickly with no bad mood, and start cooking with a joy!!! And when finally the product comes awesome, I pack it with full of love and always wait for his Lunch time....Once he finished it, My sweetheart always called me and appreciate my efforts!!! Thats felt so so Gooood!!! and I fall in love with him again and again!!!  :))


This same thing happened with me yesterday, I was thinking on my bed that what to give in lunch for tomorrow, As here In Qatar, Doha city, The temperature is going on 46 degree C.....I could not find any fresh vegetables here in Gulf, There is a one grocery store nearby my house named GEA Supermarket, I went there yesterday and luckily I got some spinach, Yes Spinach!!! But the problem is still not solved...I've made many more recipes from spinach, simple spinach curry, Spinach curry with yellow lentils, Spinach Paratha, Spinach Franky, Spinach Rolls, and Soooo On!!! So was not in mood to make any of them!!! Suddenly in night I went to my kitchen to have some water, and by having water I had one click on my mind about these Chickpeas, Awwwwwwwww......I cant tell you what stuck in my mind, That I can make chickpeas with spinach too.....It will be healthy and Delicious too!!!! By having blush on my face, I get back to my bed and slept !!!!! So on with twist I gave twist to Bhatura also!!! How can I leave Bhatura without twist??? ;)!!!!! Ok ok, let me take you to the journey of these Healthy, Delicous and yummmyy Chickpeas with Spinach and Mint Bhatura!!!




For Chickpeas With Spinach:

Ingredients:

1 cup of chickpeas (chhole) Boiled
3 cups finely chopped spinach (palak)
1 medium Onion
2 medium tomatoes
1/2″piece ginger
3-4 Garlic Cloves
3 tablespoon oil
1/4 teaspoon Asafoetida
1 teaspoon cumin seed
1 tablespoon coriander powder
1/2 teaspoon turmeric
1/2 teaspoon red pepper adjust to taste
1/2 teaspoon salt adjust to taste
1/2 teaspoon Garam masala

Method

1. Drain the Soaked chickpeas, rinse well and Boil them with salt.

2.Blend the Onion, tomatoes, Garlic Cloves and ginger to make a puree.



3. Heat the oil in a saucepan. Add the Asafoetida and cumin seeds. When the cumin seeds crack, add the Onion-tomato puree, coriander powder, turmeric, and red chili powder, and Garam Masala. Cook three to four minutes on medium heat. The tomato mixture will separate from the oil and reduce to about half in quantity.







4. Add spinach, salt, and one-half cup of water. Cook, covered, four to five minutes on medium heat.
Add the chickpeas and mash them lightly with a spatula. Add more water as needed to keep the gravy consistency to your liking. Cook on low heat for seven to eight minutes.

For Mint Bhatura:

Ingredients:

1 Cup All Purpose Flour
1 Cup Whole wheat flour
1/2 Cup Yogurt
1/2 tsp Baking soda
1/4 Cup Chopped Fresh Mint
1 tsp Carom seeds
2 Tbsp Oil
Water as needed
Salt to Taste

Method:

1. Place flour and baking soda and salt in a bowl. Mix yogurt with salt.

2. Add this to the flour and add Fresh Mint and carom seeds, and with cup of water mix gradually to make a soft dough by light kneading.


3. Incorporate two tablespoons of oil into the dough and cover the dough with a wet cloth. Keep it aside for an hour.


4. Divide dough into equal portions. Roll them into balls. Cover and keep to ferment for ten minutes. Grease your palms with a little oil and flatten the balls.

5. Roll out into five-inch diameter diskettes. Heat sufficient oil in a kadai and deep fry the bhaturas on high heat till light brown on both sides. Drain on absorbent paper. Serve hot with chhole.
