Stuffed Mawa Paratha with Maxican Seasoning



Hey Guys, I am back from my short Vacation to India! Nothing can make you so Happy when you are in your hometown and in your country....What say? Right! I am still in that Aura of My city, My place and in lots of unforgettable memories!! Meanwhile, I missed my Foodie Monday Bloghop Events !!! Hmmm....Seriously Missed these Events Every Monday!!! This Monday our theme is Indian Flat bread. As My vacations to India was full on with different foods, It's a wedding season in India, and There were two weddings at my home, So I enjoyed different varieties of food. Sometimes I really think that How they (The chefs of the wedding food (Maharaj)) develop that amazing and lip smacking taste in any dish, or in any sweets! Like, so many times I couldn't stop myself to see the method of that work to make any simple dish or the dish which we can never think to make it at home, But they do it so easily and perfectly....!!!

Parathas are one of the most popular unleavened flat breads in the northern part of the Indian Subcontinent and they are made by baking whole wheat dough on a tawa, and finishing off with shallow frying. Parathas are thicker and more substantial than Rotis and this is either because, in the case of a plain Paratha, they have been layered by coating with ghee or oil.

Parathas can be eaten as a breakfast dish or as a tea-time snack. The flour used is finely ground wholemeal and the dough is shallow fried. So, When I informed that this time its a flat bread theme, I was in Mumbai at my Masi in law's House (Manisha Masiji), I told her that this is the theme, and she suggested me to present this, Well, I have to mention here that, She is an awesome Cook, The way she cook is tremendously Awesome!!! I love her so much, Though she is my mother in law, but I am more than a daughter to her, No Rules and Regulations for me at her home, I am what I am at her place, Love you loads Manisha masi :) 



So, On our 18th Foodiemonday Blog hop Event Dedicating this post to my Manisha Masiji..... These are the Stuffed Mawa Paratha with Maxican seasoning...Sounds Good..Hmmmm!!!! Taste is also damn Good!!! Initially, I was thinking to make Mawa paratha with sweetness only....later on, had some click in my mind to add some mild seasoning in the Stuffing...What else can be added when Maxican seasonings are there....So I simply grind them coarsely..And added these seasoning to Mawa....Trust me the Flavor was amazing!! When you serve it with some lil spicy curry, That will be a perfect meal to Serve!!! Just this Saturday I landed back to Doha, Seriously was not in mood to have these type of meal, But when I had a first bite of it...You wont believe I had two full Paratha in one time...Ooops!! Yeah, I had them ;) !! Check out the simple and easy recipe of this Paratha and try them!!



Preparation Time: 10 minutes
Cooking time: 5 minutes
Serve: 4

Ingredients:

100gms Whole Wheat Flour
100gms All Purpose Flour
200gms Mawa (dried milk)
1 tsp Maxican seasoning
Water to knead the Dough
1 Tbsp Oil
Ghee to roast

Method:

1. Combine flour, oil and water and knead a dough.



2. Heat a pan on medium flame, melt Ghee and then add khoya to it. Roast the Mawa on low-medium flame till it becomes light pink. Remove from heat, transfer to a bowl and allow to cool down.


3. Then add Maxican seasoning and mix well. Divide the dough and Mawa mixture into equal portions.



4. Take a portion of dough, roll by dusting in some flour to form a thick and very small flat round. Stuff a portion of prepared Mawa mixture into it, seal it and then again dust with some flour and roll into a Paratha.



5. Roast these Parathas evenly from both the sides, remove into the serving dish, spread some ghee over it and serve hot with some spicy curry, I am serving this Vegetable kolhapuri!




Vegetable Kolhapuri

Ingredients

1 onion, chopped
1 tomato, chopped
1 potato, boiled and chopped
1 capsicum, chopped
1 carrot boiled and chopped
1 tbsp boiled green peas
2 tbsp oil
1/4 tsp cumin seeds
1/4 tsp Garam masala
1 tbsp chopped coriander
salt to taste
1 tsp lemon juice
1/4 tsp coriander (dhania) powder
1/4 tsp turmeric powder (haldi)
1/2 tsp tandoori masala
1 tsp chilli powder
1 dry red chili

To make Paste:
1 onion
1/2 piece of ginger
3 to 4 flakes of garlic
1 tomato
1 tsp sugar

Method

    1. Heat oil, add cumin seeds, dry chili, allow to splutter. Add add chopped onion, saute till tender.    Add paste.
    2. Add red chilli powder, dhania powder turmeric powder and tandoori masala Stirfry till oil separates.
    3. Add salt, garam masala, and 1/2 cup water. Allow to simmer for 2-3 minutes. Add all vegetables. mix well.
    4. Cook till masala thicken enough to coat vegetables. Add lemon juice, mix, take off fire.
    Garnish with chopped coriander, serve hot.
