Chickpea Salad


Chickpeas are a nutrient-dense food, providing rich content of Protein, Dietary fiber, and certain Dietary Minerals such as Iron, Phosphorus, Vitamins, and Zinc. It has Protein digestibility corrected Amino acid score of about 76 % which is higher than fruits, vegetables, and cereals. India is on a first rank amongst top 10 chickpea producing country by the survey of 2013 report.


Sometimes, You really want to eat something very healthy and no fuss food. Yesterday night I had Only this Salad in my dinner.....And trust me, I was so full by having it...Its full of protein fiber and many more healthy contents in it. By adding some seasoning and other ingredients it makes this salad so so delicious and yummy!!! I have added some Green moong also in it, to make it more healthy, My hubby likes moong a lot..So added them too...You can simply avoid it :) This is truly very nutritious and healthy salad to have it anytime, you can have it in a lunch, in a dinner, anytime.....!!

So lets check out what we will need to make this delicous and healthy Salad :)


Ingredients:

2 Cup Chickpeas, Boiled
1/4 Cup Whole green moong, Boiled (Optional, You can avoid it)
1/2 Cup Cucumber, Finely Chopped
1/2 Cup Carrot, Finely Chopped
1/2 Cup Onion, Finely Chopped
1/2 Cup Corn kernals
1/4 Cup Apple, Finely chopped
Extra virgin Olive Oil, as required
1/2 Cup Tomato
1/2 tsp Black Salt
1/2 tsp Salt
1/2 tsp Sugar
1/2 tsp chili flakes
1/2 tsp lemon juice
1/2 tsp Black pepper
1/2 tsp Onion Powder
1/2 tsp Oregano
1 Tbsp Tomato ketchup
1/2 tsp Fresh Mint leaves, chopped
1 Tbsp Fresh Basil Leaves, chopped


Method:

1. First of all, finely chop onion. Once that's done, finely chop cucumber and carrot, then roughly chop tomatoes, and corn kernals mix them in with the onion. 





 2. Scrape all of this, and the juice, into a bowl and dress with the juice of half a lemon and 3 tablespoons of good extra virgin olive oil. and add chopped apple. Season the salad according to your taste. 

3. Add chickpea in that dressing bowl, mix them all very well. That will give a nice creamy consistency. Allow to marinate for a little while and serve at room temperature.
 

When you're ready to serve, give the salad a final dress with the fresh mint and basil. Taste one last time for seasoning – you may want to add the juice from your remaining lemon half at this point.
